I loved this recipe and I have it in my lineup in several weeks so I can have it again. I did not do the tortilla smash style of cooking. I feel like it's trendy but not a smart way to cook. I cooked my ground pork like I would ground beef tacos.
Pickled vegetable topping
vinegar
sesame oil
1 tsp soy sauce
1 tsp sugar
thin sliced cucumber, I used a mandolin
grated carrot
thin sliced shallot
Drain veg after pickling before adding to tacos.
