Amazing Coconut Pie

AMAZING COCONUT PIE from my media specialist :) 2 C. Milk ½ C. Butter ¾ C. Sugar 1 ½ tsp. Vanilla ½ C. Bisquick 1 C. Coconut 4 eggs Combine milk, sugar, bisquick, eggs, butter and vanilla for 5 minutes. Pour into greased 10 in. pie pan. Let stand about 5 minutes….sprinkle with coconut Bake 350 45 minutes I used a pie crust and I think this pie is too wet for it. I wouldn't use a crust again. Also refrigerate your pie

So I am at a point where I'm unhappy with my weight. Its bathing suit and shorts weather. I turned to my WWs cookbook for some inspiration and decided on chicken with feta sauce. I have no idea if this is healthy but it tasted fine. I havent had Anthony's opinion on it because he isn't home from work. I used three chicken breasts sprinkle of balsamic vinegar sprinkle of ground thyme olive oil to coat my pan 1/3 cup crumbled feta 1 cup milk 1 tablespoon plus 1 1/2 teaspoons flour half of a lemons worth of juice Ground black pepper dried oregano cooked orzo cucumber chunks Coat the bottom of a pan with olive oil Place the chicken breasts in the pan Sprinkle the balsamic vinegar and thyme on the chicken Cook the chicken through, mine took maybe 8 minutes a side. Cut into your chicken and make sure it's white with clear juices. Chocolate Peanut Butter Cookies

Another cookie recipe given to me by a tenant! Heather has lived here two weeks now and she made some chocolate peanut butter cookies to send her boyfriend and we got to try some as well. These are a nice soft cookie! Chocolate Peanut Butter Cookies from someone on the foodnetwork (she couldn't find the recipe online) 8 sq (1 ounce) semi sweet chocolate 3 tablespoons butter 1 can sweetened condensed milk 2 cups biscuit baking mix 1 egg 1 teaspoon vanilla 1 cup peanut butter chips **we decided it would be just fine to toss in the entire bag of peanut butter chips** Heat oven to 350 degrees In a saucepan melt chocolate, butter, and milk over low heat Remove and add biscuit baking mix, egg, vanilla, and beat until smooth. Cool to room temperature and add peanut butter chips. Bake 6-8 minutes

Cake Walk

One of my co-workers has a daughter in another elementary school. She told me about the carnival that school has every year and they do a cake walk to raise money. People donate cakes, then there are 20 chairs set up in a circle, each chair has a number, someone plays music and when it stops you scramble to a chair, someone pulls a number out of a jar and they win a cake. You browse the table of donated cakes and get to pick whatever one you want. When you donate a cake you must be sure that you include a card with the ingredients. The theme for the schools carnival was Space Odessey 2009. Here is DH's cake decoration of the cake we donated. It's cute!

Chinese Chicken Salad

I wanted a Chinese chicken salad for lunch today so I decided to make one. I used Ina Garten's recipe, then I didn't like the dressing so I had DH throw more stuff into the dressing to improve it. Also I browsed Bobby Flays Chinese chicken salad and decided to combine both Ina's and Bobby's. I liked Bobby's vegetable ideas better. I also decided that I did not end up saving any $ by making this at home and next time I should just go to Cheesecake Factory and order myself one. This recipe tasted good, but DH said he gets a Chinese chicken salad from Lawson's for $7 and he likes the dressing better. I may have to start watching Sandra Lee's show about saving money. Oh no! Cheesecake Brownies

So one of my favorite pizza places, Armand's has cheesecake brownies or they USED to have cheesecake brownies. We went a week ago and when I ordered one to go, the waitress said they didnt have any and were only going to make 1 kind of brownie from now on. WHAT?! They took the best thing on the menu away. So I looked up a cheesecake brownie recipe, bought the ingredients, and had ment to make the brownies for a week. I made them today. They really satisfy :) in fact I want to eat the whole pan. Emmy made these cookies last night. I have had plenty of hard, crunchy snickerdoodle cookies. These really are soft. I love them. I must save this recipe here and I hope some more people try them out.
