Pineapple Pork Tacos

  This is my new favorite Hello Fresh meal. They had a ton of flavor and even included cilantro which I'm always suggesting they include!  

Pork fajita bowls

  This was also Hello Fresh, but had a lot more ingredients.  We bought the guacamole side again.  Tons of flavor.  I didn't add a bunch of additional ingredients either, just an extra lime so we had more wedges to squeeze.  I actually prepped everything ahead of time so when it came to dinner I only had to cook the peppers and onions, pork, and boil the rice.

Jerk chicken tacos with mango slaw

  Hello Fresh box.  This was an easy meal for me to put together on a work night.  My additions were some microwave coconut rice and I added some pickled jalapeno to the slaw for heat.  This makes 3 tacos each!

Flatbread Pizzas

Chicken, bacon, ranch, avocado Greek tzatziki chicken, dill Chicken Bacon Ranch Flatbread Ingredients: for 2 naan pizzas! naan flatbread diced cooked chicken.  I did chicken tenders that I marinated in italian dressing and chimmichurri diced cooked bacon.  I did 4 strips ranch dressing diced green onion whites diced avocado fresh basil leaves shredded mozzarella cheese Preheat oven to 400 degrees Smear ranch dressing on naan flatbread Add mozz cheese, chicken, bacon, green onions. Breakfast Burrito

Ingredients: Southern style hashbrown potatoes, the frozen kind with onions and peppers Tortillas, heated so they are pliable Canned black beans, drained and rinsed Shredded cheese, usually some cheddar  1 lb ground breakfast sausage, browned Spices like salt, pepper, garlic powder, onion powder, paprika, cayenne if you like heat *I dont eat eggs, but my boyfriend has added scrambled eggs to his I make the filling, top with cheese, and roll each burrito. To freeze I wrap a paper towel around the burrito and then wrap in saran wrap. To cook in the morning you just need to microwave  the burrito in the paper towel a few minutes!  Less than 3 will do

Hello Fresh Peruvian Chicken Bowls

 We added some guacamole on the side, but this dish is awesome too.  I wish it had some cilantro.

Hello Fresh Pork taquitos

 This meal is so so so good!  I added some microwave Uncle Ben's Spanish rice and some microwave text mex pinto beans.  We had enough filling to make a 7th taquito so I grabbed a tortilla form the fridge to make an extra.

Homemade Pizza

 This was the most round pizza I've made so far!  I had to share it.  

MD style Hot Crash Potato

  Ingredients: Small round potatoes, these were red potatoes Olive oil Salt Pepper Old Bay Instructions: Heat oven to 450 Bring a pot of salted water to boil.  Add potatoes and cook until tender. Drain potatoes. Add foil to a baking sheet and spray with cooking spray or use a little olive oil. Place potatoes on the baking sheet. With a potato masher (we use a meat mallet) gently smash potato. Drizzle the smashed potatoes with olive oil.  Salt, pepper, and add Old Bay to taste. Bake 20-25 minutes until you see golden crispy edges. Eat the perfect side dish!  You can top these like a baked potato if you like.  

Turkey meatloaves asian style

 These were crazy good.  I did have to make mashed potatoes too because I like my meatloaf with mashed potatoes.  I had some broccoli that was a little underdone after roasting, so I'd steam it next time.  

American goulash

 I was supposed to make burgers with the Hello Fresh meal.  I took the ground beef and made goulash instead because that is what I was feeling.  It made so much I couldn't finish it.  I did have to mix macaroni noodles with egg noodles.  

Hello Fresh version of peanut noodles

  Honestly, my previous peanut noodles were better.  I didn't like having to cook anything and when I ate this I ended up avoiding the ground pork.  I just like peanut noodles room temp!  

Chicken Fajita

  I had to make my own fajita seasoning so here it is!  I happened to have all the ingredients and these tasted awesome.  I did buy a sliced onion/pepper box form the grocery store to help make this quick. 1 tablespoon cornstarch 2 teaspoons chili powder 1 teaspoon salt 1 teaspoon paprika 1 teaspoon white sugar 1/2 teaspoon onion powder 1/2 teaspoon garlic powder 1/2 teaspoon ground cumin

Big Greek Cafe

  There is a new wrap at Big Greek Cafe.  Chicken, bacon, ranch, avocado.  Tasty, and not Greek in any way.

Sloppy Joes

I switched the pork out for beef.  It may be an upcharge to do it but I'm used to beef in my sloppy joes.  I had to spice this up my way.  I ended up adding vinegar and mustard and maybe some bqq sauce. I didnt want pickled veggies so I used some leftover slaw on top.  It was a great sandwich.  I just wasnt feeling an asian sloppy joe.    

Bulgogi Meatballs

  This was good!  Rice, meatballs, steamed carrots.  Can't go wrong

Cheese Enchiladas

I was feeling cheese enchiladas that I topped with a can of beef chili.  I made homemade enchilada sauce. Ingredients 10 small flour tortillas 3 bricks of cheese shredded with the food processor.  I recommend cheddar, colby jack, and pepper jack 2 16 ounce cans fire roasted diced tomatoes 2 4 ounce cans diced green chili 1 15 ounce can tomato sauce 1 onion, diced 1 clove garlic, minced 1/2 tsp salt 1 tsp cumin 1/2 tsp oregano 1/2 tsp basil 1/2 tsp cilantro 8 ounce sour cream Make the enchilada sauce first! Sautee onion and garlic in a large pot.  In a blender puree the diced tomatoes.  Add the pureed tomatoes, tomato sauce, chilis, seasonings to the pot with the onion and garlic.  Bring to a boil, simmer for an hour. Ladle a layer of sauce in the bottom of your casserole dish. Add shredded cheese to tortilla, roll, place seem side down in the sauce. Ladle a layer of sauce over the top of the enchiladas. Spaghetti

I made spaghetti and used the last of the buccatini I found at Aldi.  I think the pasta is over rated.  Spaghetti noodles are just fine.  

Hello Fresh steak pita

This recipe was good for a lunch.  I wouldn't buy it as a dinner.  It had so much filling it would have been nice to have extra pitas to divide it into 4 pita sandwiches.  

Hello Fresh Chicken Ramen in Shoyu Broth

This recipe was amazing.  I also got to use my new Christmas presents of ramen bowls, chopsticks, and spoons!  

St Patrick's Day corned beef

  We went to the beach house for St Patrick's Day.  I have never gone to the Ocean City parade before!  It was very long.  We had a large corned beef from Aldi in the crockpot for dinner though.  I think next year I will make the potato, carrot, cabbage separate.  They seemed over done.  The corned beef was perfect though.  It slow cooked about 12 hours on low.   Corned beef Beef broth Seasoning packet Mustard for serving

Hello Fresh Pork Gyoza Tacos

 I loved this recipe and I have it in my lineup in several weeks so I can have it again.  I did not do the tortilla smash style of cooking.  I feel like it's trendy but not a smart way to cook.  I cooked my ground pork like I would ground beef tacos.   Pickled vegetable topping vinegar sesame oil 1 tsp soy sauce 1 tsp sugar thin sliced cucumber, I used a mandolin grated carrot thin sliced shallot Drain veg after pickling before adding to tacos.  

Hello Fresh Pesto noodles with lemon ricotta

So I hated this recipe.  It needs a lot of tweaks to get it right, but I probably will just avoid ordering it again.  The ricotta was very good.  I would make the lemon ricotta and put it on toast anytime. For the lemon ricotta (two large dollops worth) 4 ounce ricotta zest of a lemon juice from half a lemon salt pepper drizzle olive oil

Pizza

  I love making pizza.  I need to get fancier with my toppings.  It's usually peppers, onions, pepperonis.

Taco Soup

  I make this so often now.  Just open some cans and you have soup for days!

Sams Club Swedish Meatballs

  These were a Sams Club item in February.  We decided the meatballs needed more flavor, but for a fast meal I may buy them again.  We put them over noodles, but mashed potatoes would be good because there was a lot of sauce.  

Semi homemade Chicken Pot Pie in Crockpot

 Chicken pot pie filling made in the crockpot yesterday.  I will turn into a pie today! Ingredients: two chicken breasts seasoned with garlic powder, onion powder, salt, pepper, thyme 2 cans cream of chicken soup 1/2 cup chicken broth 1 bag of frozen mixed vegetables 3-4 smallish potatoes, diced Cooked on high in the crockpot for 4 hours.   Shred chicken. Pour into a casserole dish and top with some latticed pie crust Bake until crust is golden and filling is bubbling

Spicy Peanut Noodles

  Happy Lunar New Year!  I made some spicy peanut noodles and roasted brussel sprouts.  I also got to use my new ramen bowls! Ingredients: Ramen noodles 2 tablespoons peanut butter 2 tablespoons soy sauce 1 tablespoon chili crisp in oil 1 tablespoon rice wine vinegar 2 teaspoons sugar a little water to thin sauce if you want hot water from the wet noodles helped thin and combine my sauce.  the peanut butter was hard to get combined.

Chicken fajitas

I made some chicken fajitas on my cast iron grill.  The leftovers become a quesadilla.  I need to make chicken more often and I need to use my grill pan more often!    

Chicken and mashed potatoes and broccoli

 I haven't been taking many food photos since Christmas.  I save so many recipes, but don't make a lot of them.  Hopefully something interesting will be posted soon!
